When our friends at Stillwell Beer Bar in Halifax called us up and asked us if we would like to brew a special beer for their one year anniversary we jumped at the chance.
This required a collaboration. So Chris, Andy and Laura from Stillwell made the trip down to Shelburne from Halifax for a day of brewing, tomfoolery and general mayhem.
What did we come up with? A very special Saison.
Made with premium Canadian and German malts, we added a touch of beechwood smoked malt for a great background character. We made it mouth puckeringly dry, with a very slight tart mouthfeel that made it super refreshing, lively and light on the palate. We added UK Goldings and Czech Saaz hops which complemented the smoked malt perfectly. Finally we used a special French farmhouse yeast that spiced up the brew with hints of clove, allspice, black pepper, wrapped up in a fruity body of tangerine, pear and white grape.
Stillwell says “thank you with a beer”. Merci Bière.

Availavble at Stillwell Beer Bar starting with their one year anniversary party on November 16, 2014.
Afterwards you can get it in growlers at the Halifax Seaport Farmer’s Market on Saturdays.
It will be available in 650 mL bottles at Bishop’s Cellar, Harvest Wines, Cristall Wine Merchants, and Premier Wine & Spirits.
Of course, you can also get it at the brewery retail store at 78 Ohio Road in beautiful Shelburne.
